  • 6 bowls of rice
  • 2 bowls gram dal
  • 1 cup sour buttermilk
  • Half a teaspoon of salt
  • A pinch of turmeric powder
  • 1 tsp ginger chili garlic paste
  • 1 teaspoon chopped green garlic
  • Green chopped coriander
  • Finely chopped capsicum
  • 1 piece finely grated carrot
  • 2 to 3 spoons of sour milk

In the first step, soak the rice and dal. Depending on the measure, you can use any bowl. There should be six bowls of rice added. You will need to take khichdi rice. Now you will need to take two bowls of gram dal and divide them three to one. Now, it is necessary to wash these dal and rice in water twice to three times. There are six people in our family who need dhokla.

The dal and rice need to be cleaned with clean water and soaked in water, for that, add water in both pots so that some water falls on top of the dal and rice, cover the pots and let it soak for four to five hours. The water should be drained after rice and dal have been thoroughly soaked for four to five hours.

Add half of the rice, sour buttermilk, salt, turmeric, and half a teaspoon to a mixer jar. Add a pinch of sugar to the jar and mix well. Once that has been done, close the lid of the mixer and grind it as smooth as possible.

Once the ground rice has been removed from the pan, grind the remaining rice in the mixer jar in the same manner. Using the same mixer jar, grind gram dal in addition to buttermilk, half a teaspoon of salt, and a pinch of turmeric, close the lid of the mixer, and grind until it is smooth. Add this ground dal to the rice grinder after it is well ground. The dal-rice mixture should be added and mixed well. Replace the lid and let it ferment for five to six hours.

The dhokla batter will be perfectly ready after six hours if bubbles can be seen in it and it has a nice fermentation. By adding turmeric to this batter, you get a light yellow colour for dhokla batter.

Khatta Dhokla Recipe

To make this live vegetable sour dhokla, take three doyas of the prepared dhokla batter and divide it among three pots of water. If you have green corn, you’ll need two or three spoons of sour milk and one spoon of ginger chili garlic paste along with chopped green garlic, chopped coriander, small grated carrots, and a little finely chopped capsicum. Additionally, you can add the seeds. When you mix these prepared vegetables with the separated batter, it makes the dhokla taste very good.

Make this special dhokla if you ever make dhokla with vegetables like this before; it is very good. You might be making plain dhokla with khata live, but this is something you’ve never tried before. Mix well all the vegetables and add salt according to taste, and if salt is added during grinding, add it accordingly to the mixture. Mix well for one to two minutes after adding a pinch of baking soda. The dhokla batter can also be made without fruit salt, simply grease the dish with oil and add the prepared dhokla batter. Set the dish aside to dry.

The dhokali should be boiled by adding a lemon wedge to the water and heating it on the gas to prevent it from turning black. The battery dish should be placed in the dhokali when the water starts boiling, then sprinkle red chili powder over it and cook for 10-12 minutes. The gas should therefore be kept on a high flame. The lid should be closed and it should steep for a few hours.
